I know what you’re thinking..this recipe looks too easy to be good..I thought the same thing before I made it! ..And then subsequently made it every night for the next week until I ran out of arugula 🙂
You can also use this recipe as more of base salad and add in other fresh veggies or toppings that your heart desires to make it into a meal.
Arugula Salad

minutesThis clean, simple salad is easy to put together and trust me, it has flavor! Perfect for a side dish or before a meal.
Ingredients
6 generous handfuls of arugula
¼ cup extra virgin olive oil
1 lemon juiced
salt (to taste)
freshly ground black pepper (to taste)
vegan parmesan cheese (shreds or shaved work best)
¼ cup thinly sliced red onion
Directions
- In a large salad bowl, combine the lemon juice, extra virgin olive oil, salt and pepper.
- Place the arugula in the bowl and toss with the dressing.
- Top with vegan parmesan cheese and sliced red onion
- Serve immediately. If you want to make the dressing in advance, wait to mix it with the arugula, cheese, and onion until ready to serve.
Notes
- This dressing is a simple staple that can be used time and time again – give it a try!
- If you have other greens, feel free to throw some in as well. Spring mix goes nicely in this.
