Ingredients
1 cup raw cashews
2 tablespoons lemon juice
1 teaspoon apple cider vinegar
½ – ¾ cup unsweetened dairy-free milk
pinch of salt to taste
Directions
- Boil a pot of water and add cashews to water when boiling. Boil cashews for about 20 minutes or until soft. Alternatively you can let cashews soak in water overnight.
- Once cashews are soft, drain the water.
- Add cashews, lemon juice, apple cider vinegar, and ½ cup dairy-free milk into a blender. Blend on the highest setting until smooth and creamy. If the mixture is too thick, carefully and slowly add more milk
- Once blended, put sour cream into a container with a lid and place it in the refrigerator to chill.
