This dairy-free cashew sour cream is made with simple ingredients that come together quickly. Try this out in place of sour cream in your recipes! Vegan and gluten-free.

Ingredients

  • 1 cup raw cashews

  • 2 tablespoons lemon juice

  • 1 teaspoon apple cider vinegar

  • ½ – ¾ cup unsweetened dairy-free milk

  • pinch of salt to taste

Directions

  • Boil a pot of water and add cashews to water when boiling. Boil cashews for about 20 minutes or until soft. Alternatively you can let cashews soak in water overnight.
  • Once cashews are soft, drain the water.
  • Add cashews, lemon juice, apple cider vinegar, and ½ cup dairy-free milk into a blender. Blend on the highest setting until smooth and creamy. If the mixture is too thick, carefully and slowly add more milk
  • Once blended, put sour cream into a container with a lid and place it in the refrigerator to chill.
