Chickpea & Veggie Salad

minutesThis salad is really easy to make and keeps well in the refrigerator. You can add in more veggies or take any out you do not like.
Ingredients
1 can of chickpeas (15 ounces) drained and rinsed
2 small cucumbers sliced lengthwise and then sliced into ¼″ slices
1 small red onion diced
1 large tomato chopped
1 cup of sliced pitted black olives
¼ cup chopped fresh parsley
1 can of quartered artichokes (14 ounces) roughly chopped
- Dressing
3 tablespoons of fresh lemon juice
2 tablespoons of olive oil
1 teaspoon of maple syrup or agave
2 cloves of garlic minced
salt and pepper to taste
Directions
- Combine all ingredients into a large bowl.
- Add the dressing ingredients to a small bowl or bottle and mix well.
- Pour the dressing over the salad and mix to coat.
- Keep the salad refrigerated until ready to eat.
