Sometimes the winter months have us stuck on those heavier, decadent desserts…I’m talking about pies, cakes, brownies, etc.
Don’t get me wrong I love those all equally but I’m also a cold coffee in the winter kind of gal so you know I will break all of the rules with desserts too!
*Drumroll* Introducing this almost raw, creamy yet surprisingly light, *healthy*, fruity cheesecake that has me thinking about summer and sunshine!
So what exactly is Sambucol black elderberry extract and why am I adding it to anything and everything this winter?
Sambucol is a unique black elderberry extract rich in immune supporting flavonoids
Flavonoids are powerful, natural antioxidants that are thought to work to protect the body’s cells from the potential damage caused by free radicals.
Certain flavonoids – anthocyanins – are found primarily in the pigments of dark blue and deep purple fruits such as the black elderberry. It is these that have a remarkable ability to support the body’s immune system.

No Bake Blueberry & Black Elderberry Cheesecake

minutesThis no-bake vegan cheesecake is a healthy treat! You could easily make this with any fruit or even skip the fruit altogether if that’s not your thing. For this recipe below I am using fresh blueberries and Sambucol black elderberry extract. Tip: go for fruit that’s in season and have fun with it!
Ingredients
- Cake crust
Your favorite homemade or store bought crust – try my super easy 2 ingredient raw dessert crust: https://zoedoesvegan.com/raw-dessert-crust/
- Cheesecake cream
⅔ cup cashews (soaked overnight or boiled for 25 minutes until soft)
⅓ cup coconut yogurt
3 tablespoons of maple syrup or other sweetener
¼ cup non-dairy milk of choice (I used coconut milk)
1 tablespoon Sambucol black elderberry extract
1 cup blueberries
Directions
- Blend soft cashews, yogurt, maple syrup, and milk in a high-speed blender.
- Set aside ⅔ of the cream in a bowl. With the remaining cream in the blender, add the Sambucol black elderberry extract and ¾ cup blueberries.
- To Create Swirls (shown in the pictures):
- Spread the light cream (the cream without the elderberry extract and blueberries) from your bowl onto your crust.
- Do not freeze the light cream layer first. Instead make lines across your light cream layer using a spoon with the purple cream.
- Take a knife and swirl the purple layer. Put in the freezer to set for at least 2 hours.
- Allow it to thaw before eating.
- To Create Layers (not shown):
- Spread the light cream (the cream without the elderberry extract and blueberries) from your bowl onto your crust.
- Put the crust and light cream layer in the freezer to set for 30 minutes.
- Take it out and add the purple layer from your blender on top and freeze again for at least 2 hours.
- Allow it to thaw before eating.
- Use the remaining blueberries to top the bars.
Notes
- You can really customize these bars anyway you want ~ make multiple layers, top it with nuts, chocolate, or coconut shreds, etc.!
