Summer Squash Bowtie Pasta

1 pound of bowtie pasta
1-2 tablespoons of olive oil
4 cloves of garlic thinly sliced or minced
2 medium zucchini
2 medium yellow squash
¼ cup chopped fresh basil plus extra for serving
1 cup vegan parmesan cheese
1 tablespoon of lemon juice
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon red pepper flakes (optional)
Directions
- Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
- Heat oil in a large pan over medium heat. Add garlic, zucchini, and squash and sauté for 3 – 5 minutes or until tender.
- Add cooked pasta to the pan with the vegetables. Season with salt, pepper, and red pepper flakes (optional). Add in lemon juice, basil, and parmesan cheese. Toss to combine.
- Top with additional basil and parmesan cheese.
- Serve warm or refrigerate and enjoy cold.
