Summer Squash Bowtie Pasta

Ingredients

  • 1 pound of bowtie pasta

  • 1-2 tablespoons of olive oil

  • 4 cloves of garlic thinly sliced or minced

  • 2 medium zucchini

  • 2 medium yellow squash

  • ¼ cup chopped fresh basil plus extra for serving

  • 1 cup vegan parmesan cheese

  • 1 tablespoon of lemon juice

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

  • ¼ teaspoon red pepper flakes (optional)

Directions

  • Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
  • Heat oil in a large pan over medium heat. Add garlic, zucchini, and squash and sauté for 3 – 5 minutes or until tender.
  • Add cooked pasta to the pan with the vegetables. Season with salt, pepper, and red pepper flakes (optional). Add in lemon juice, basil, and parmesan cheese. Toss to combine.
  • Top with additional basil and parmesan cheese.
  • Serve warm or refrigerate and enjoy cold.
